Over the past few weeks I have been a little more quiet on here. There has been a lot going on in my life and I needed some time away to recharge and figure out exactly what I wanted to share with you all. I was lacking inspiration and direction and wanted to be sure that I was offering my most authentic self.
I decided something I'd like to do more often is share collections of what I'm currently obsessed with and why. This way you can get to know me better and maybe even spark some inspiration in your own life! Below are some things that I am currently loving lately...
Chicken & Orzo Salad
This is my go-to dinner recipe in the spring/summer. I have been making it often because it is so delicious, light, and hits the spot! Try it out yourself:
1 cup orzo pasta (I use whole wheat)
1 cup tomatoes (sliced)
1/2 cup fresh basil (torn)
1/2 cup rotisserie chicken (pulled into chunks)
2-3 cups arugula
1/2 cup red wine vinegar
Salt & pepper (to taste)
Fresh lemon juice (to taste)
1/2 cup feta cheese
Combine all ingredients in a large bowl and enjoy!
Rupi Kaur Poems
There has been a lot of change, reflection, growth, and expansion happening all around me. I have been turning to Rupi Kaur poems to anchor my thoughts and empower me to find strength. I never really was into poetry and usually prefer self-help books, but she has sparked a new love. I highly encourage reading them! I plan on sharing more about adaptogens soon, but I have been really loving Reishi. I add it to my matcha lattes and enjoy the benefits including: calmness, centeredness, balance, inner awareness and inner strength.
